Super Simple Egg Salad

Ingredients:

  • 2 boiled eggs

  • 1 spring onion

  • 1 medium cucumber

  • 1/2 tablespoon olive oil

  • 1/2 tablespoon vinegar or lemon juice

  • A pinch of salt

Instructions:

  1. Start by boiling 3 eggs until they are hard-boiled. Once boiled, peel the eggs and chop them into small pieces.

  2. Finely chop a spring onion, including both the green and white parts.
